  • Combine rice flour and water, and let the mixture rest for 4 hours.
  • While waiting, dissolve sugar in coconut milk. Once dissolved, mix in baking powder and salt. Once rice flour mixture has rested, mix in the coconut milk mixture. Let the batter rest again for another hour for the Calumet baking powder to activate.
  • Once the apang batter has rested, lightly oil a hot frying pan, then ladle in the batter to your desired size. Cook in low heat like a pancake, then remove once browned.
  • To enjoy, take an apang, add grated eden cheese and fold the apang like a half-sandwich. Enjoy while still warm. 
  • Note: To help cook the top, add a teaspoon of water on the sides of the pancake and cover once steam is produced.
