CHEESY CASSAVA CAKE

- Preheat oven to 180ºC.
- In a mixing bowl, mix together cassava, coconut milk, evaporated milk, condensed milk, eggs, melted butter and grated Eden Cheese. Once combined, place in a greased/buttered 9x13 inch baking pan, cover with foil and bake for 45 min.
- While baking, combine the coconut milk, condensed milk, grated Eden Cheese and melted butter in a sauce pan. Heat and whisk until the mixture thickens. Bring out the cassava cake from the oven after 45 mins and pour the milk cheese mixture over the cassava.
- Bake without the foil cover for 10-15 more minutes or until the top part starts to toast.
- Remove from the oven, and let the cassava rest and cool for easier cutting.
