  • Marinade the pork in mixture of soy sauce, calamansi and black pepper for 30 minutes to an hour. Before cooking, drain the pork and save the excess marinade for cooking. 
  • Heat the oil in a cooking pot. Fry the pork liver and once lightly browned, remove from the oil and sauté the garlic and onion. Once onions are translucent, add in the pork loin/lomo and cook until brown.
  • Deglaze the pan with the water, then mix in the remaining marinade. Simmer in medium heat for 30 minutes or until pork meat is tender. Add in the pork liver and cook for 5 minutes to prevent the liver from overcooking.
  • Add in the red bell pepper, green peas, and cubed Eden Cheese, then cook for 3 minutes more. 
  • Transfer to serving bowl and serve with hot rice.
